Course Description

This course covers the basic principles of nutrition, including knowledge of the principal nutrients in foods and their utilization by the body and determining and meeting food needs for optimum health at different stages of the life span.

Learning Outcomes and Objectives

  1. The student will demonstrate an understanding of basic nutrition concepts and choose a balanced diet for a healthy person throughout life by:
    1. translating the nutritional concepts into terms understandable by the layman.
    2. illustrating a knowledge of the foundations of nutrition that will enable the student to understand basic nutritional requirements.
  2. The student will demonstrate an understanding of the health implications that choice of food makes in developing and maintaining the human body by:
    1. listing the classes of foods and describing each group’s role in cellular physiology.
    2. describing the two phases of metabolism in terms of the totality of the chemical reactions a cell or organism is capable of performing.
    3. drawing the schematic of cellular respiration that results in the production of energy molecules.
  3. The student will apply the science of nutrition as a basis for making intelligent evaluations of new discoveries in agricultural products by:
    1. preparing a list of acceptable foods from each food group that will illustrate a balanced diet.
    2. delineating between the food requirements for each of the major periods of the life span.
  4. The student will demonstrate an understanding of how to alleviate or delay diet-related health problems through the concept of preventive nutrition by:
    1. interpreting food values of vitamins, calories, carbohydrates, lipids, and proteins of common foods.
    2. illustrating the modifications of a normal diet that occur in diet therapy.
  5. The student will demonstrate an understanding of food-borne illnesses by:
    1. listing and describing their common signs and symptoms.
    2. explaining the common precautions against food-borne illnesses.
    3. identifying common microbial contaminants for the foods that they contaminate.

Criteria Performance Standard

Upon successful completion of the course the student will, with a minimum of 70% accuracy, demonstrate mastery of each of the above stated objectives through classroom measures developed by individual course instructors.
